Heidi's Dragon Noodles
These are noodles with a sweet-spicy sauce. The sauce can be made mild or hot,
to your taste. They're a great side dish or, for vegetarians, could be the main
course. They're good warm but even better cold, so they're great to make ahead
for any event.
Dressing

1/4 cup Japanese sesame oil

1 tablespoon chili oil (hot - you may want to try starting with less)

1 teaspoon Chinese chili sauce

2 1/2 tablespoons black soy sauce

2 tablespoons freshly squeezed lemon juice

2 tablespoons total pickled ginger juice and chopped pickled ginger

2 1/2 tablespoons rice vinegar

2 1/2 tablespoons sugar (or less, if rice vinegar is seasoned)

1/2 teaspoon salt

Grated peel of 1 lemon

2 tablespoons toasted sesame seeds

3/4 cup green and white chopped green onions
Toss the dressing with 1/2 to 1 lb. warm cooked noodles (spaghetti), coating
the noodles thoroughly. Then serve warm or chill and serve cold.
