Gigi's Slow Eggs
This is Gigi's way to fix scrambled eggs. They're moist but not gooey -
highly recommended. They'll take 20 to 25 min. to prepare.
Ingredients:

Eggs - at least 2 for each person

Salt and pepper, to taste
Directions:

Break eggs into bowl. Whip with a fork until they're blended.

Put eggs in a saucepan - not a frying pan - so eggs will cook slowly in the
deeper pan.

Set stove burner to very low heat, as low as possible.

Stir eggs occasionally during first 15 min. or so. Stir more often as eggs
begin to solidify, and stir constantly toward the end, when eggs are finished.

Add salt and pepper toward the end of the cooking process.

Serve immediately and enjoy!
